This Sunday- April 22nd- is Earth Day. A time to celebrate this beautiful planet- Gaia- we live on and her all-providing ways. These next few days I invite you to carry gratitude in your heart for all that she has devoted to you.
"To eat well is to take food that strengthens, refreshes, and leaves the head clear; food that does not bemuse the intelligence, excite, burn, or weigh on the stomach.
It means taking the fruits of the Earth you are living on when nature offers them; putting as little space and time between the Earth and your mouth; preparing them with the least artifice as possible; presenting them raw or cooking them over a gentle heat.
It means restoring your health and strength first from the brown bread of the Earth, the Grey salt of the sea, and olive oil and honey from the sun."
